Granted, this is not so much a recipe as it is a convenient lunch for a busy vegan, but this is one of my favorite sandwiches. For a little extra flavor add some bacon-flavored tempeh strips such as Fakin’ Bacon by Lightlife or, my personal favorite, Smoky Maple Bacon Marinated Tempeh by Tofurky.
1 avocado (sliced)
1 tomato (sliced)
2 bread slices
Slice the avocado in half. Remove the pit with a spoon. Remove the pulp by sliding a spoon between the pulp and the skin. Cut the pulp into slices. Spread hummus on 2 slices of bread (preferably toasted). Place the avocado slices and tomato slices between the 2 slices of bread and enjoy.
