This tofu salad or “egg” salad sandwich, as it is called in the cookbook, is delicious. I have made this recipe several times, and I LOVE it!
The recipe is fast and easy. You do need to let the tofu cool before finishing it off and serving, but it is well worth the wait. Does it taste like egg? No. It is better than egg salad. The spices and vegan mayonnaise are what makes it so good. I used Vegenaise from Follow Your Heart. I did add 2 ingredients to the salad this last go around; vegan bacon flavored bits (which is actually textured vegetable protein – TVP) and sliced grape tomatoes.
I will continue to make this recipe. I just have to pace myself so that I don’t get sick of it.
